Mother’s Recipe: Steamed Ilish Indulgence in Microwave Oven

Ilish machh is divine. And if you come across a Bengali who doesn’t like Ilish Machh, trust me, he isn’t a Bengali by heart. There may be a lot of stereotypes regarding this eastern community of India, but Ilish Machh and Bengali are synonymous. And you just can’t blame the monkey-cap loving people for the aroma of the Hilsha fish is to die for. It’s a sin not to appreciate the magical fragrance of the fish. The better the fish, more is the khushbu.

While most fishes that Bengalis savour need to be fried before making the curry, Hilsha frees you from all the complexities of cooking science. Today as we start making Bhapa Ilish or Steamed Ilish Indulgence in microwave oven, you wouldn’t even need an array of raw materials. To begin with you would need

Bhapa Ilish

Hilsha fish -6 pieces
Nigella Seeds (Kalonji) – 1 tsp
Green Chilies – 3
Mustard paste with chilli and salt – 4 tbsp
Yogurt – half cup (battered)
Cumin powder – tsp
Turmeric Powder -1 tsp
Salt – according to taste

1. Shallow fry the Hilsha if you doubt it’s not fresh enough. Otherwise just marinate the fish with salt, turmeric, mustard paste, yogurt, cumin powder in a MW safe bowl.

2. Keep the fish marinated for good 1 hour. The more the merrier.

3. Now saute Nigella Seeds for a few seconds and pour it including the oil on the marinated fish.

4. Add water. Remember this water would be the amount of gravy you need.

5. Put it in a microwave oven for 5 minutes.

6. At 4 minutes, carefully open the oven and put slitted green chilies on the bowl. This will help the wild flavor of chilly to come out.

7. Once done let it stay for 10 minutes inside the oven.

8. Now bring out the fish and serve Bengalis delicacy with white rice.
